Fast Taco Soup



This is a great recipe for quick lunches. Teach a teen to prepare this and enjoy dinner made by your kids!

1 tablespoon olive oil
1 lb lean ground beef
1 can corn, drained (omit or I might substitute a can of chopped green chilies)
1 (15 oz) can dark red kidney beans (do not drain)
4 cups low-sodium tomato juice
1 package taco seasoning
Garnish: sour cream
Garnish: shredded cheese

1. Heat the oil in a medium skillet over medium-high heat. Add the beef and cook until no longer pink and starting to brown. Drain well and set aside.
2. Meanwhile, combine the remaining ingredients except garnishes in a large pot and bring to a boil.
3. Add the hamburger to the pot and simmer for about 10 minutes. Serve with sour cream and shredded cheese.
