Hot Cheesy Broccoli Dip

I made this on Thanksgiving and took it to my Mother's house. Most of my family is pretty skeptical about low-fat or 'diet foods', but this was a real hit with veggies, Garden Harvest chips & Triscuits. So, I thought I would share with all of you!!!

Hot Cheesy Broccoli Dip
(from recipezaar)

1C broccoli florets, chopped fine
2T onions, chopped fine
2T red bell peppers, chopped fine
1/4C parmesan cheese, grated
1 garlic clove, pressed (used roasted garlic from the jar)
1C reduced-fat cheddar cheese, shredded
1/2C fat-free sour cream
1/2C light mayo
1/8t ground black pepper
4 pita bread rounds (I omitted the pita bread, but I'm sure it would be good)

Preheat oven to 375 degrees.

Chop broccoli, onion and bell pepper and place in small bowl. Add 2 tablespoons of grated Parmesan cheese, garlic, and remaining ingredients to the vegetables. Blend well. Spread mixture into a baking dish and bake for 20 to 25 minutes or until heated through. Sprinkle remaining Parmesan cheese over top and surround with pita chips before serving.

Hey Erica,

I guess it made about 2 or 2 1/2 cups. I put it in the smallest flat corningware dish that I have to bake it. I'm sure you could double the recipe with no problems. I just baked it until it was nice & bubbly. Nothing really needs to cook in it. And I found out that it's really pretty good cold as well !!! I carried broccoli, cauliflower, red, orange & green bell peppers, cherry tomatoes and baby carrots with it over to my Mother's. And the dip was good with all of those, but I think everyone liked the crackers the best!!!

If you do get a chance to make it, let me know how it turned out, k???

Oh wow! That sounds so good! Had I not just done my grocery shopping for the week, that would be on the menu. Definitely next week though! I can't wait to try this!!

I did hold my portion sizes to only a couple of tablespoons. It was hard, but I did it!!!

I should have posted that this was definitely for a get-together and not something to sit down and eat half of at one time. I'm keeping this one in my list of holiday recipes. Even tho I swapped out the cheeses, mayo & sour cream for less-fat/no-fat versions, it still packs a calorie punch!!!
