Breakfast and Snack Ideas

I'm just starting Phase 1. I have lunch and dinner ideas down, but breakfast and snacks are a little concern for me. I'm usually out of the door pretty early and don't get to eat breakfast until I'm at my research center. I need ideas for portable breakfasts. I have access to a microwave and fridge at my research center. I'm lactose intolerant so I can also have goat cheese and yogurt.

Also, I need snack ideas! I keep failing at Phase 1 because I have nothing to snack on so I usually cave in and have fruit or some type of pastry. Any ideas would be great. Thanks!

Boiled eggs are very portable, and you can make them in advance.

Wanted to add to Joy's post--the Morningstar Farms patties are great, and they are microwavable--about 1 minute is all they need. Some scrambled eggs or egg beaters with some veggies & a patty would be a good Phase 1 breakfast. The veggie quiche cups are a good quick breakfast option that you can make ahead and keep in the freezer to reheat.


One of my favorite snacks in phase 1 was a few slices of deli meat spread with Laughing Cow light cheese & rolled up--sometimes with spinach or roasted red pepper in it as well. Yogurt w/ peanut butter is great, too (either for breakfast or a snack)
