I made this last night. It was super easy and we all loved it. I was thinking next time that I might try putting a few sweet potatoes in it. This time I doubled the veggies, next time I'll triple them. I would say that with at least doubling the veggies, this feeds four. I had enough leftover to have a small lunch portion today.
DH said the only thing wrong with this recipe is that it didn't make more!!!
Crockpot Beef Stew
2-4 TB. whole wheat flour
12 ounces beef stew meat
2 TB cooking oil
2 cups vegetable juice (I used low sodium V8)
1 cup water
1 TB Worcestershire sauce
1 1/2 tsp. instant beef bouillon granules
1 tsp. dried oregano
1/2 tsp. dried marjoram
1/4 tsp. black pepper
1 bay leaf
1 medium onion, cut into thin wedges (I used 2, since we like onions)
2-3 stalks of celery, cut up (I used 7)
3 cups cubed potatoes (OMIT or sub sweet potatoes)
1 1/2 cups green beans (I used frozen cut green beans)
1 cup sliced carrots (I used at least 2 cups baby carrots)
Place flour in plastic bag. Add meat cubes, shaking to coat. In a skillet brown meat in hot oil. In a crockpot cooker layer meat, onion, celery, potatoes, green beans and carrots. Combine vegetable juice, water, worcestershire sauce, bouillon granules, oregano, marjoram, pepper and bay leaf. Pour over meat and vegetables. Cover and cook on low for 10 to 12 hours or cook on high for 5-6 hours. Remove bay leaf. Enjoy.




Hope you like it, Destiny!!! I know what you mean about the crockpot. I'm just leaving mine on the countertop these days, since I'm using it about every 2 or 3 days. What a wonderful invention!!!
