Apricot Pecan Chicken



Sweet apricot combined with the woodsy flavor of chopped pecans gives this chicken a rich flavor.

2 chicken breasts, cut-up
Sauce:
1/2 cup sugar-free apricot preserves
2 T cider vinegar
1 clove garlic, minced
1 T soy sauce
1 t ginger
1/2 cup chopped pecans
Fresh black pepper

1. Preheat oven to 350 degrees F.
2. Mix together all sauce ingredients, set aside.
3. Place chicken breasts on a roasting pan. Baste with apricot mixture and bake for about 30 minutes or until cooked through. Keep basting every 10 minutes.
4. Last 5 minutes of cooking, turn the oven to broil. Lightly brown the chicken just before serving.
