Sugar Free Eggnog
Makes about 8 (1/2 cup) servings
2 cups skim milk
1/4 cup FF half and half
2 tablespoons cornstarch
2 eggs, beaten
1/2 cup Splenda
2 teaspoons vanilla
1/4 teaspoon ground cinnamon
2 cups skim milk, chilled
1/8 teaspoon ground nutmeg
Mix 2 cups milk, cornstarch and sugar substitute in small saucepan; heat to bubbling. and stir for 1 minute.
Beat eggs in medium bowl. Mix about half of milk mixture into eggsin the bowl; then add the egg mixture to remaining milk in saucepan.
Cook over low heat until slightly thickened, 1 to 2 minutes, stirring constantly. Remove from heat and stir in vanilla and cinnamon. Cool to room temperature; refrigerate until chilled, or until serving time.
Stir 2 cups milk into custard mixture; using a whisk blend briskly until smooth and thin, Serve in small glasses or punch cups. Sprinkle lightly with nutmeg.
Variation: If desired, 1 to 1 1/2 teaspoons rum or brandy or the alcohol-free flavoring can be stirred into the eggnog.



Ok, this used to be, without a doubt my favorite thing about the holidays...eggnog!!!
I definitely will be making some of this in a few weeks. I've been passing by the eggnog in the grocery store ever since Thanksgiving. I did buy a small container of the low fat variety for DD, but I've been good..and I'm glad it's all gone because I don't know if I could resist it if any more were brought into the house.

I've never made this one, too much work. But I make this "mock" eggnog and its very good considering how easy it is (especially with some spiced rum in it LOL!)
INGREDIENTS:
* 1 pkg instant ff/sf vanilla pudding
* 1 1/2 quarts ff milk
* 1 tsp rum extract
* 1/2 tsp nutmeg
PREPARATION:
Blend pudding mix and 2 cups of milk, following directions on pudding package. Chill for 5 minutes. Add the rum and nutmeg, then mix in the rest of the milk. Chill and serve.

I am so glad you posted this! I LOVE eggnog and I wasn't as strong as Rebekah.
Well Erica, as far as me being strong about the eggnog, my DD was watching the level of the container like a hawk!!! I could have had some if I wanted, but I just pushed it to the back of the fridge and pretended it wasn't there!!!
I figured I might have a sip or two right around Christmas, but with these fine recipes, I might be able to have 1/2 cup serving a few times now.

Thanks for the additional recipe, MichaelAnn. I have seen this one with the sf vanilla pudding before and always wondered if it was good. Sometimes the recipes like this, with just a few ingredients don't turn out as well as had hoped. I'm glad to hear that you like this one...I'll probably wind up making both of these at some point or another, to see which one I like the best. But maybe I'll just try one of them this Christmas and wait until next year for the other. If I don't make them both, I certainly can't be drinking all that!!!
