Ingredients

  • 1 1/2 cup(s) broccoli, stems only, peeled until smooth; shred by hand or in a food processor with a shredder or fulienne blade
  • 1 cup(s) carrot(s), shredded
  • 1/4 cup(s) pepper(s), red, bell, diced
  • 1/4 cup(s) pepper(s), yellow, diced
  • 1/4 cup(s) vinegar, balsamic
  • 2 tablespoon oil, olive
  • 1 tablespoon basil, fresh, minced
  • 1/2 tablespoon oregano, fresh, minced
  • 1 tablespoon scallion(s) (green onions), minced
  • 2 tablespoon lemon juice



Preparation

1. In a large bowl, combine the first three ingredients. In a blender, combine all remaining ingredients for the dressing. Blend until smooth.


2. Pour the dressing over the slaw and toss well. Serve immediately, or refrigerate before serving.
