Phase 1 Foods on the go??

I am really trying to plan out my meals for the week but I go to school full time as well as work full time which makes it really difficult to do. I'm always strapped on time so I can't make omelets or things like that in the morning on most days. Does anyone have any advice for food you can grab and go for those days that I don't have the time?? I'm starting Phase 1 tomorrow.

Veggie Quiche Cups is the best phase 1 breakfast recipe. It's in the book or you can search for it here. You can also prepare some yogurt the night before for a quick breakfast. Just mix plain non-fat yogurt with some splenda and vanilla extract. You could also add some peanut butter. Another idea is a cheese stick and a small can of V8.

I make the veggie quiche cups and then put two in a snack size ziploc bag and grab them as I leave for work in the morning. They are usually defrosted by the time I get to work and I just pop them in the microwave for a few seconds to warm them up. I've also been in a pinch and eaten them cold.

I always keep a can of nuts in the car. Ditto on the cheese sticks & V-8. Some people hard-boil a bunch of eggs and use those as their grab 'n go breakfast.

When you move into Phase, other goodies to stash in the car are dried apricots, individual bags of SB wheat crackers & SB snack bars.
