Help! My mom is having teeth pulled!

My mother is a II diabetic and has been doing the SBD. She is going to have all of her teeth on the bottom pulled next week and she isn't going to be able to chew, eat salads, etc. for a few days. She does need to have 2 or so servings of carbs a day. Does anyone have any suggestions?
She is thinking about getting turkey and beef baby food. I suggested buying some low-carb shakes. She also purchased some lentil soup and FF refried beans.
She has to have some carbs, but not too many. She also has to eat protein several times a day, most of which require CHEWING!
Any ideas are welcomed! I was bragging to her about how great this message board is!

Here are some ideas:
Smoothies...made with skim milk, fat-free plain yogurt, splenda and extracts or sf syrups. You can add tofu or peanut butter for protein. You can also add fruit if she is in phase 2.
Yogurt....flavored the same as for smoothies.
Soups (cheesy broccoli is a good one - you can search for it here - also check out the soups threads in the recipe folder. You'll find that one and many others).
Scrambled eggs (add some cheese)
Homemade crab cakes - these may be soft enough

Scrambled eggs were my first thought for protein.
Also, these type of cereals have a good amount of protein (a bit more than one egg) and would be great for "carbs":

Obviously some extra dairy - smoothies, yogurt, etc. would also give her some protein.
