What's your favorite side/veggie recipe?

I've noticed that there is a thread for soup recipes and one for chili recipes.  I was wondering if there were any for side dishes and/or veggie sides?  If not, maybe we could start one!  I need some inspiration :)

Here's my latest favorite...I leave out the Thyme Leaves...found this around Thanksgiving.


Savory Mashed Sweet Potatoes

Prep: 5 min - Cook: 10-30 min

2 pounds sweet potatoes, washed and dried
2 tablespoons softened butter
2 teaspoons McCormick® Pure Vanilla Extract
1 teaspoon McCormick® Ground Ginger
1/2 teaspoon McCormick® Thyme Leaves
1/4 teaspoon salt


1. Pierce each potato twice with a fork so excess steam can escape while cooking. Microwave* potatoes on HIGH 5-10 minutes or until tender, turning potatoes over halfway through cooking. Let stand 5 minutes or until cool enough to handle.

2. Remove the skin from the potatoes. Place potatoes and remaining ingredients in a large bowl; mash until smooth and well blended.

* Potatoes can also be boiled. To boil, cut potatoes into pieces and place in a large saucepan. Add cold water to cover 1-inch over potatoes. Bring to a boil; cover and cook over medium-low heat 15-30 minutes or until tender. Drain.

Makes 4 (3/4 cup) servings

I just found this recipe, and I'm going to try it this week:


Roasted Green Beans with Mushrooms (Cooking Light - 2007)


6 cups quartered cremini mushrooms (about 1 pound)


1 cup thinly sliced shallots


5 garlic cloves, chopped


1½ pounds green beans, trimmed


Cooking spray


1½ tablespoons canola oil


1 tablespoon chopped fresh thyme


½ teaspoon freshly ground black pepper


¾ teaspoon salt
