I've had this recipe for a long time and ate it even before the beach..however, it fits in perfectly....enjoy!


 


Zuchini-Cheese casserole


3 md.zuchini squash


1/2 c. chopped onion


fresh tomatoes-the amt you need will be different based on what kind of tomatoes you use and how big they are( i.e you need to use less regular tomatoes and more romas b/c romas are smaller)


2 Tbsp. olive oil


1# FF or LF cottage cheese


1 tsp. basil


1/2 tsp. oregano


1/3 c. LF parmesan cheese


 


Slice zuchini thin.  Sautee zuchini and onion in olive oil till zuchini is softened and onion is opaque.  While you are doing this , whip cottage cheese, and seasoning in a blender.  Spray a casserole dish with Pam and layer zuchini-onion mixture, then cottage chees mixture, the thinly sliced tomatoes. Repeat 1 more time ending with the tomatoes. Top with parmesan cheese and bake at 350 for 25-30 minutes. It will be bubbly and top should be browned.


Makes 6 servings


Cook's notes:  This originally came from an oild cookbook my Grandma had from the American Heart Association.  If you use ff cottage cheese, which I do, use a slotted spoon to remove servings as it creates a lot of water/ juice along with the veggies at the bottom of the casserole.  I have never tried it with the LF cottage cheese. Regular cottage cheese, which my mom, uses didn't create that liquid at the bottom.


Also, I like cheese so I usually sprinkle in some LF mozzarella cheese in my layering.


As is , it is a deliscious recipe that tastes very Lasagna-esque.  I eat this alot for lunch b/c it keeps for several days in the fridge and is a great way for me to get my veggies in.

dyk I ate half this casserole for dinner last night and then the other half today for lunch and WOW so good that I am about to make another one and I am taking half of that to the 13 yo who is on day 5 of Phase One and doing so well but maybe needs some new things to eat!!!

Glad you like it...its one of my favs and originally came from an old(like in the 70's) american heart association cookbook. Thanks for the feedback.

I love zucchini and it would be good to know if it works.


BTW, try the zucchini pancakes if you haven't yet. I make a sauce for them out of lf sour cream and horseradish. They may be my favorite food!
