pizza toppings?

I am going to try making that ww pizza crust this weekend and I'd love topping suggestions.   I like funky toppings so really anything goes but I'm having trouble thinking of a good combo.

We just made one with carmelized onion, arugula and goat cheese. It was SO good! I did another one with roasted garlic, pesto, ricotta and some fresh pecorino romano. That one was a huge hit at our New Year's party. I love BBQ chicken w/red onions and cilantro, thai peanut chicken w/bean sprouts and carrots. I also love just good old tomato, basil and fresh mozzarella. We don't really do many tomato sauce topped pizzas I guess, but when we do I like to do tomato sauce, cheese and then a mix of roasted veggies (mushroom, zucchini, asparagus, bell pepper, artichoke hearts, etc.)

My favorite place for inspiration is the California Pizza Kitchen menu! (none of these are obviously SBD-friendly, but I've found so many can be made to be with substitutions)

I did a copy cat of their Chipotle chicken recently using a lime/avo/cilantro vinegrette, black beans, salsa, chicken and roasted chilies.

My new favorite topping is marinated artichoke hearts and goat cheese.


In fact, I am using this combination on almost everything...I bought a huge jar of artichoke hearts and a big piece of goat cheese at Costco. The other night I baked chicken breasts with the artichokes, then melted goat cheese on top. Last night I baked a piece of salmon and then made a warm vinaigrette with halved grape tomatoes, capers and artichoke hearts.

My DH and kids prefer meat on their pizzas, so I use either turkey or chicken sausage (squeeze it out of the casings and brown it first), or turkey pepperoni for them. I like veggies, so anything MichaelAnn and Karen suggested is great. I love spinach on pizza, too.
