Broccoli and Cheese Casserole (P1 or P2)

I made this last night, modifying it from a Cooking Light 2007 recipe.  It can be P1 friendly without the crackers on top. 


Broccoli and Cheese Casserole


2 (10-ounce) packages frozen chopped broccoli, thawed


Cooking spray


1 cup fat-free milk


2½ tablespoons whole wheat flour (Leave this out for P1'ers; it will be fine without it)


½ teaspoon salt


¼ teaspoon freshly ground black pepper


¾ cup (3 ounces) shredded sharp Reduced Fat Cheddar Cheese (or whichever lowfat cheese you prefer)


1 cup reduced fat mayonnaise


For P2'ers - Kellogg's All Bran Crackers (Garlic & Herb flavor), crushed (about ½ cup crushed)


1.  Preheat oven to 375.


2.  Arrange broccoli in an even layer in a baking dish coated with cooking spray; set aside.  (I used round baking dish, and it fit perfectly)


3.  Combine milk, flour, salt, and pepper in a large saucepan over medium-high heat; bring to a boil.  Cook 1 minut or until thick, stirring constantly.  Remove from heat.  Add cheese and stir until smooth.  Stir in mayonnaise.  Spoon cheese mixture evenly over broccoli.


4.  Phase 2 only:  Crush the All Bran crackers, and spread over top of the casserole.


5.  Bake at 375 for 25 minutes. 


Makes 10 servings (serving size:  about ¾ cup)

Yes, I think next time I will cut the mayo by half!!!

I really think next time I make it, I am just cutting the mayo in half and not substituting anything in it's place - it was really gooey - which was good, but a tad heavy on the mayo taste and it could have afforded to have left it out along with all the additional fat/calories! haha

If I decide to add rice to this instead of the crushed crackers, should I pre-cook the rice?

This (well not the healthy version) used to be my reward for getting striaght A's in school. I would work my butt off to get this receipe. I'll have to try it.

I do something similar - but what I do is basically make a bachemel sauce w/corn starch (I prefer it as a thickener to whole wheat flour), a smart balance, milk and cheese, then add it to the broccoli and bake - just like you would for mac n cheese, with broccoli instead of pasta. No mayo needed and its still a nice thick, creamy sauce. I guess technically that is quite different from this recipe - but the same general idea with no mayo. I also really like it with a mix of broccoli and cauliflower.
