Broccoli and Cheese Casserole (P1 or P2)

I made this last night, modifying it from a Cooking Light 2007 recipe.  It can be P1 friendly without the crackers on top. 


Broccoli and Cheese Casserole


2 (10-ounce) packages frozen chopped broccoli, thawed


Cooking spray


1 cup fat-free milk


2½ tablespoons whole wheat flour (Leave this out for P1'ers; it will be fine without it)


½ teaspoon salt


¼ teaspoon freshly ground black pepper


¾ cup (3 ounces) shredded sharp Reduced Fat Cheddar Cheese (or whichever lowfat cheese you prefer)


1 cup reduced fat mayonnaise


For P2'ers - Kellogg's All Bran Crackers (Garlic & Herb flavor), crushed (about ½ cup crushed)


1.  Preheat oven to 375.


2.  Arrange broccoli in an even layer in a baking dish coated with cooking spray; set aside.  (I used round baking dish, and it fit perfectly)


3.  Combine milk, flour, salt, and pepper in a large saucepan over medium-high heat; bring to a boil.  Cook 1 minut or until thick, stirring constantly.  Remove from heat.  Add cheese and stir until smooth.  Stir in mayonnaise.  Spoon cheese mixture evenly over broccoli.


4.  Phase 2 only:  Crush the All Bran crackers, and spread over top of the casserole.


5.  Bake at 375 for 25 minutes. 


Makes 10 servings (serving size:  about ¾ cup)

I would pre-cook it, since it wouldn't 'cook' on its own in the oven.

I pre-cooked the rice and made it. It wasn't too bad. Not quite cheesy enough for me, probably b/c I had added the rice.
