Stuffed Pepper Soup
Serves about 6

1 pound lean ground turkey
2 8-oz cans tomato sauce
1 14 oz. can diced tomatoes
1 cup cooked brown rice
1 cup chopped green pepper
1 beef bouillon cube
1 tsp. salt (or to taste)
1/2 tsp ground pepper (or to taste)
Brown turkey in a large saucepan and drain off excess liquid. Add remaining ingredients to pot. Bring the mixture to a boil and reduce heat to low. Simmer for about a half an hour or until peppers are tender.

I used ground turkey (not turkey breast, but the 93% lean ground turkey) when I made this, and it was one of DH's favorite soups. I ended up adding quite a bit more water than the recipe called for, though, b/c it seemed way too thick to me--and I like thick soups!
