Winter Barley




1 lb. lean ground beef
¼ cup celery, chopped
½ cup onion, chopped
¼ cup green pepper, chopped
1-1/4 tsp. salt
½ tsp. marjoram
1 tsp. Worcestershire sauce
1/8 tsp. pepper
1 15-oz can chopped tomatoes
¼ cup barley
1-1/2 cups water




1. In a large saucepan, sauté the beef, celery, onions, and green pepper until the beef is browned, about 15 minutes. Drain.

2. Add the remaining ingredients.  Simmer 30 minutes covered or until barley is tender. Makes 6 servings.

I cannot find barley at either grocery store in my town. What do you think would be a good substitution? Brown or wild rice maybe? Kinda would not make it Winter Barley though would it?! I so wish I was close to a good store. Whole Foods would be

I live in a rural area of Mississippi... the health food section has pork rinds! LOL. No really.

From the search I just did it sounds like it's more nutritious than pearl barley but it will have to cook longer.
