Winter Barley




1 lb. lean ground beef
¼ cup celery, chopped
½ cup onion, chopped
¼ cup green pepper, chopped
1-1/4 tsp. salt
½ tsp. marjoram
1 tsp. Worcestershire sauce
1/8 tsp. pepper
1 15-oz can chopped tomatoes
¼ cup barley
1-1/2 cups water




1. In a large saucepan, sauté the beef, celery, onions, and green pepper until the beef is browned, about 15 minutes. Drain.

2. Add the remaining ingredients.  Simmer 30 minutes covered or until barley is tender. Makes 6 servings.

I made this (w/o the marjoram b/c I didn't have any on hand) and it was delicious!

Michelle, I've sometimes had difficulty finding barley also. Health food sections are good for searching and so are the bottom shelves where you find split peas and lentils. A couple of times I've found barley in the soup mixes.
