Bohemian Macaroni & Cheese

Bohemian Macaroni & Cheese
•
1 fl oz. Olive oil
•
5 oz. Cooked Whole Wheat Ziti Pasta
•
1 tsp Chopped Garlic
•
1/2 tsp Shallots, chopped
•
1/4 tsp Asparagus Tips
•
2 tsp Sun dried Tomatoes, julienne
•
2 tsp Truffles, shaved
•
1 tsp Fresh Herbs, chopped
•
1/3 cup ff Half and Half
•
1/4 cup Goat Cheese
•
1 oz. wt/ Crispy Prosciutto
Directions:
Sauté garlic and shallots quickly in olive oil (do not burn), add asparagus tips and truffle, add half and half and reduce by half. Add chopped herbs and goat cheese, and continue to reduce until sauce is thick enough to coat a spoon. Add sun dried tomatoes and cooked pasta. Place in bowl. Garnish with crispy prosciutto.

I thought "bohemian" meant something like "ghetto".
So the truffles kind of surprised me.

I believe "bohemian" implies "untradtional"....hence the truffles.
I haven't tried it, but thought it was an interesting recipe. I wouldn't know where to buy a truffle! I guess mushrooms would make a nice substitution.
You could probably get the same effect for a lot less money and trouble by using truffle oil instead of regular olive oil.
Also, here's some random trivia for you: I am pretty sure that the recipe gets its name from the Bohemian Hotel in Orlando, where its the "signature dish". And the hotel uses the word "Bohemian" to mean "artsy". I stayed there for a wedding a few years back and we couldn't stop laughing about the name, since here in CA the word has rather morphed to mean "dirty hippy trying to appear artsy." And it seemed particularly funny that this relative would throw a wedding in a place that conjured up those images. But it was a beautiful wedding, a lovely hotel and pretty tasty mac & cheese.
