Green Mango and Cucumber salad

I don't remember where I saw/read the original recipe for this and got the idea. But I just made my quickie version and it was sooooo yummy. Sorry if I don't have exact measurements on everything, I'm an "eyeball-it" kind of cook.
- 1 large green firm mango (make sure it's still firm, the flesh should be yellow and tartly sweet)
- 3 pickling cucumbers (can use a hothouse or English cucumber, as long as it has thin skin and no seeds)
- good balsamic vinegar
- salt and pepper to taste
Peel, seed and dice the mango into small chunks. Dice the cucumbers into similar-sized chunks as the mango. I usually eyeball it so there's the same amount of cucumber as mango. Could be 3 pickling cucumbers, or 4, or 2, depending on the size. Toss together with balsamic vinegar (enough to coat all the chunks). Salt and pepper to taste. Cover and let sit in the fridge for at least 15 minutes. Enjoy!
