Minestrone Soup

My Minestrone Soup: basically lots of veggies and a few beans :)
Saute 1/2 onion, 1 chopped celery stalk and 1 chopped carrot in olive oil until softened. Add 2 cloves garlic, 1 tsp thyme and 1 bay leaf. Cook until garlic is clear, don't brown. Add a large can of whole tomatoes in juice--smoosh or cut up the tomatoes and 4-6 cups chicken broth (I use water + bullion). While the liquid is heating, chop and add a small head of broccoli, a zucchini, yellow squash, a can each of green beans, white northern beans and kidney beans, all drained and rinsed. Simmer everything for at least 30 minutes, until all veggies are cooked. For phase 2 & 3 you can add 1/2 cup of whole wheat pasta shells (or whatever shape you like) and cook until done. Fairly similar to Olive Garden minestrone :)
