I made something so good this evening.  DH loved it.  I used leftover pork tenderloin.  You can really use the amount of eggs and oil you want.  There's no set amount. 


 Moo Shoo Pork


Pork tenderloin, shredded


eggs, whisked in cup


mushrooms, cut up


Veggies (I used shredded carrots (phase 2) but can use shredded cabbage, broccoli, etc)


Soy Sauce (light)


sugar (splenda)


WW Tortilla (phase 2)


Heat oil in skillet.  Add eggs and cook almost set.  Flip over and cook other side.  Remove to a place.  Cut into strips.  Add veggies and saute.  Add pork.  Top pork with some soy sauce and a little splenda.  Heat through.  Add eggs to combine and put on plate.  Eat alone or wrap in a tortilla.  It's yummy!

With the changes you suggested it would be fine in phase 1 and in phase 2 you can have the carrots and tortillas.

I was wondering what I was going to do with my left over Tenderloin I made sunday night. I just froze the rest. Cathy if you don't mind me asking could you tell me where the recipe is using the cabbage Thanks
