Hummus with a Twist

Here's a novel take on traditional hummus: Replace the usual garbanzo beans (aka chickpeas) with tender young zucchini, and you've got a healthy twist on an old favorite, courtesy of The Eat-Clean Diet Cookbook by Tosca Reno. With its low calorie count, you can slather it on sandwiches, whole-wheat crackers or pita chips without fear.

Ingredients:
2 cups chopped, unpeeled young zucchini
2/3 cup tahini (sesame seed paste)
1/4 cup water
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
Juice of 2 fresh lemons
2 cloves garlic
1/2 teaspoon sea salt

Place all ingredients in food processor. Puree and serve with crudites or pita chips.

I have some young zucchini (whoever asked, it's based on size. If it's the size of a club or baseball bat, it's not young! *LOL*) in the fridge, maybe I'll make this tomorrow.

I made this yesterday. I didn't have parsley so I put in cilantro instead.


It's good but it came out too watery. I would leave out the water next time and just add it at the end if needed. Mine is more like a sauce than a dip. I ended up making some felafel and spooning it over that, which was really good!
