Poached Halibut and Peppers

POACHED HALIBUT AND PEPPERS
- 1 1/2 cups dry white wine or chicken broth
- 1 cup water
- 2 yellow sweet peppers chopped
- 3 tbsp. drained capers
- 4 cloves garlic minced
- 1/4 to 1/2 tsp crushed red pepper flakes
- 4 Halibut fillets or any white fish
- 2 tbsp olive oil
Bring wine, water, sweet peppers, capers, garlic, and red pepper flakes to a boil in a large saute pan. Reduce heat and simmer for 5 minutes uncovered. Place fish in a single layer and season with salt and pepper. Spoon liquid over fish. Return to simmer and cook covered for 4-6 minutes per 1/2 inch thickness of fish- until fish flakes easily when tested with a fork. Finish with a drizzle of olive oil and a little of the poaching liquid.
