I finally tried using triscuit thin crisps to make nachos.  They were really good.  If you miss corn tortillas, do try this, because MichaelAnn was right that these are tasty!


I don't have a true recipe, just kind of threw this together and it made about 4 servings.


Would you please double check and make sure I didn't accidentally include anything non-SBD friendly?


Triscuit Thin Crisps


1 bag Morningstar (MS) crumbles


1/2 yellow onion, chopped fine


1 pkg taco seasoning


Fat free refried beans


4 Roma tomatoes


Shredded lettuce (used iceberg and spinach)


Medium salsa


Reduced fat cheddar


Reduced fat sour cream


1 bunch green onions


Spray nonstick skillet with cooking spray.  Add the MS crumbles with the yellow onion in a nonstick skillet and saute for about 1 min.  Cook with taco seasoning according to package directions.  Place Triscuit on microwave safe plate, top with RF cheese and microwave about 15 seconds.  Top with remaining ingredients.
