This is a family favorite. We have it about once a month.
Unstuffed cabbage crockpot supper
1 pound ground beef (I use ground turkey) 1 small onion -- chopped 4 cups chopped cabbage (I put as much of a whole head of cabbage as my crockpot will hold) 1 green pepper -- chopped (optional) 1 cup cooked brown rice 1 cup water/chicken broth 6 ounces tomato paste 15 ounces diced tomatoes (+ 1 can mild Rotel tomatoes) 2 Tbl.s vinegar 2 packets Splenda 1 Tbl. Worcestershire sauce 1 1/2 tsp. salt 1/2 tsp. pepper 1/4 tsp. garlic powder
Brown beef and onion in skillet; drain well. Combine all ingredients; cook on low for 4-5 hours.
This makes a ton. Great if you like leftovers. Freezes well also.
This is what came to mind for me.

Moo Shu Stoup
Pork and Pepper Salad
I got the Healthy Ones sausage and made that with the cabbage.
