African Shrimp Skillet


I had seen a recipe for african shrimp skewers with lime, cumin, and cinnamon and decided to make a meal out of it -- last night, incidentally.  My husband's still raving about it!


2 medium sweet potatoes, peeled and chopped into 1-inch cubes


1 can of black beans, rinsed and drained


1 can of petite diced tomatoes (I used the zesty jalapeno variety)


2 lbs of large-extra large shrimp, peeled and deveined (raw or cooked -- I used cooked because they were on sale at my store)


1/2 c chopped onion


1 tsp ground cumin


1 tsp ground cinnamon


1 T ground chili powder


2 T fresh squeezed lime juice


2 T chopped cilantro (optional)


Salt and pepper, to taste


 


Saute onion and sweet potatoes in 2 tsp extra-virgin olive oil until both are softened; add black beans and tomatoes, season with salt and pepper.  Add cumin, cinnamon, and chili powder.  Cook about 5-7 minutes.  Add shrimp, and cook until heated through (or opaque if using raw shrimp).  Add fresh lime juice, garnish with cilantro, and serve.


Pair this with a side salad, and dinner is served!
