Vegetable Fish Fillets en Papillote


1 1/2 pounds cod fillets
1 cup onion, sliced
3 cups zucchini, sliced
1 cup green pepper slices
1 tablespoon vegetable oil
3/4 cup tomatoes, chopped
2 tablespoons grated lemon or lime peel
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon pepper
1 drop hot pepper sauce
1/4 cup Parmesan cheese

To cook en papillote is to cook inside a parchment paper wrapping. This allows the food to steam in its own juices, resulting in delicious flavor as well as lower-fat, healthier dishes.

1. Heat oven to 375 degrees F. Cut parchment paper into four heart-shaped pieces
large enough to hold the fish and vegetables on one half of the heart. Be sure to allow a margin of paper about 1 1/2 inches all the way around.
2. Cut fish fillets into 4 pieces. Place one piece of fish on half of each piece of parchment paper. Combine remaining ingredients and place about one cup of vegetable mixture on each piece of fish.
3. Fold the empty half of the heart over contents. Beginning at one end, crimp the edges of the paper to form a tight seal, twisting two or three times at the opposite end to finish.
4. Place the paper packets on an ungreased cookie sheet. Bake 20 to 25 minutes until the packets are very puffy and the paper is very well browned.
