Tomato Asparagus "Alfredo"

Just made this for dinner tonight and it was soooo good!  If you ever had the stuffed chicken sienna when they had it at Olive Garden, it reminds me very much of that, flavorwise.


Tomato Asparagus "Alfredo"
Makes 2 servings


2 C grape tomatoes
1 C asparagus, trimmed, cut into 1" pieces
salt & pepper to taste
1 T olive oil
1-2 cloves garlic
3 wedges laughing cow light


Preheat oven to 450.  Place casserole dish or stainless steel skillet in oven to preheat.
Toss tomatoes, asparagus, and olive oil in large bowl.  Add salt and pepper to taste (I really like kosher salt for this).
Spread evenly over heated baking dish.
Roast approximately 7-10 minutes, remove dish from oven, shake to loosen vegetables, and return to oven.
Roast an additional 5-10 minutes to reach desired doneness of asparagus.
While tomatoes and asparagus are cooking, crush or finely mince 1-2 cloves garlic, as desired.  Peel the 3 wedges of laughing cow.
After asparagus has reached desired doneness, remove pan from oven.
Gently stir in crushed garlic and laughing cow cheese wedges.


The cheese doesn't melt great, and I found it easier to push all the veggies to one side and let the juices that had come out of the tomatoes go to the other side, and then mash the laughing cow into that.


I made this hoping it would be tasty, and it was so yummy, I think I'm going to be making this again in a couple of days for my mother.


I'm doing Phase 1 right now, so I had mine over some sliced chicken breast, but this would be yummy tossed with some whole wheat penne or linguine.

This is going on the menu for this week - so simple - and I really loved the last veggie casserole thing I made - I ended up making TWO of them.
