bbq chicken??

I have chicken breast and Legal BBQ sauce (finally found some!) and was looking for a recipe.  I live in Michigan so I will not be using a grill, just the stove top.

I would typically grill chicken breast but to make it indoors I would brush the chicken with bbq sauce and cook it in the oven on a foil lined pan at 350 for about 30 minutes or until the chicken is cooked through.

When we can't grill (not too often here, except when it rains) I use either my cast iron grill pan or broiler pan and broil it in the oven. I like to do a dry rub, broil until almost done, and then brush with sauce at the very end.

I was in a hurry once, when I came up with DH's favorite bbq chicken -- he still loves when I make it.


Chunk the breast or tenderloins into bite size pieces, put in a saute pan.

Yep - there are, I think the easiest to find is KC Masterpiece Low Calorie Classic Blend (it has a blue ribbon on the label) I've also found quite a few more "gourmet" local brands that meet the 3g of sugar or less requirement by reading lots of labels.

I'm right next to Michigan (1hr outside Sarnia) and we grill all year long, unless it is actively snowing. Anyway, I can't help with bbq sauces, but I can tell you what we do often. I'll take chicken out the night before so it thaws. Toss it is a bag with salad dressing and let it marinade over the course of the day and then bbq when I get home. Tends to be very juicy, and super easy. If you can't bbq, then I'd throw it in the oven under the broiler for a bit. And the trick for me is if it is not easy or optional it does not get done some days...

Good luck! We're heading down to Port in a few weeks, in Canada none of the Kraft SB stuff is available. And that really bites.....

They are a little tough to find near me too -- I've never seen the KC Masterpiece or Kraft light.
