Anyone have a good lasagna recipe?

DH and I are having dinner with some friends on Saturday, and are supposed to be bringing lasagna.


Anyone have a good SB friendly recipe that will still taste great?  We do need to do "real" lasagna and not the crock pot version.


I want to show them how great things can taste - - DH and I are trying to convince a couple to join us.  The wife wants to, but her DH isn't sure...

There are a lot of brands of whole wheat lasagna noodles, my favorite are the Hodgson Mill ones - but I have found quite a few brands at all my regular grocery stores. I just substitute those in my regular recipe, and use low fat cheese and lean meats. Everyone loves it and can't tell the difference.

Cathy, I was just putting this lasagna recipe in my folder of new recipes to try. And I have a few questions about the quantity of the ingredients that I thought you could clear up for me.

1/2 eggs
Is this 1 or 2 eggs???

4lbs. ricotta cheese
That seems like alot???

7 8oz. package of baby bella sliced mushrooms
Is this 7 of these 8oz. packages???

Maybe it's just too late for me to be reading this recipe...or maybe I need glasses...LOL!!!

I make the one on the back of thebox and use all SB friendly ingredients. I made one for Christmas dinner with Sean's family and they could not stop proclaiming how good it was. HIs grandfather is diabetic and was still eating white flour and while pasta and white rice - WTH!!!

Well, I make vegetarian all the time, but I still use a tomato sauce. I make my regular tomato sauce (no meat - just onion, garlic, olive oil, red wine, tomatoes, seasonings) Then I sautee julienned zucchini, red and yellow peppers, carrots with more garlic and olive oil. I usually throw in some spinach and artichoke hearts too. Then I add it to the tomato sauce instead of meat. When I make the lasagna I alternate between layers of sauce, cheese, and then a layer of pesto, sauce, cheese, pesto, etc.

All these lasagna recipe's sound good to me. I saw an egg plant lasagne recipe on here before but now can't seem to find it. The egg plant was sliced and used instead of the noodles so it is P1 friendly. Anyone have the recipe? I wanted to make it tomorrow night.
