P1 "Fried" Chicken--EASY!

I made this for dinner for DH and me last night and it was very good!


"Fried" Chicken


2 boneless skinless chicken breasts (about 4-6 oz each)
1/2 C shredded 2% cheese (I used half cheddar, half 5 cheese Italian)
seasonings to taste (I used kosher salt, black pepper, sage, onion powder and garlic powder)
1-2 T olive oil


Pound any thick parts of the chicken so it is all an even thickness.
Mix cheese and seasonings together.  Coat chicken breasts with cheese mixture. 
Heat olive oil in a non-stick skillet over medium-high heat.  Add chicken breasts and cook about 5-8 minutes on each side until cheese is crispy.  Do not turn until cheese is crispy.


I served mine with some garlic/olive oil oven roasted green beans and it was YUMMY!


(I used thawed IQF boneless skinless chicken breasts, so I didn't need to add anything to make the cheese mixture stick due to the wetness of the breasts; if you are using fresh you may need to dip the chicken in a beaten egg first.

Oh, sorry--IQF=individually quick frozen (I buy the 3 or 6 lb bags of breasts from the store).
