Kashi GoLean Carrot Spice Muffins

Recipe makes 12 muffins


Ingredients:

1 1/2 cup unbleached flour (for SB use whole wheat flour -- I used whole wheat pastry flour)


3/4 cup flaxseed meal


1 cup Kashi GoLean (not Crunch) cereal, crushed to 3/4 cup


2/3 cup evaporated cane juice crystals (Splenda)


2 teaspoons baking soda


1 teaspoon baking powder


1/2 teaspoon salt


1 teaspoon cinnamon


1 teaspoon pumpkin pie spice


1 1/2 cups finely shredded carrots


1/2 cup raisins (omit - or substitute another SB-approved dried fruit.  I chopped up a few prunes)


1/2 cup finely chopped walnuts


1/3 cup skim milk (I ended up using about 2/3 cup because the batter was very dry)


1/4 cup unsweetened apple sauce


4 egg whites


1 teaspoon vanilla extract


Directions:  In a large mixing bowl, mix together flour, flaxseed meal, GoLean, Splenda, baking soda, baking powder, salt, cinnamon and pumpkin spice.  Stir in carrots, fruit and nuts.  In a small mixing blow, beat egg whites.  Add milk, applesauce and vanilla.  Mix well.  Pour into dry ingredients and stir until just moistened.  Do not overmix.  Coat muffin tin with cooking spray.  Fill tin approximately 3/4 full.  Bake at 350 for 15-20 minutes.


 


These are really good!  They aren't that sweet which is fine with me, but if you like a sweeter muffin you might want to add more splenda.
