Spinach Breakfast Pie

Spinach Breakfast Pie


1 10-oz package frozen chopped spinach


1 12-oz carton 1% cottage cheese


1 cup grated reduced fat mozzarella or cheddar cheese


3 eggs


2 Tablespoons canola oil


1/2 teaspoon onion salt


1/4 teaspoon Tabasco


1 Tablespoon grated parmesan cheese


1 tomato, sliced


Prehead oven to 350 degrees.  Cook spinach in boiling water or microwave for 5 minutes or until soft.  Press out all water; it's worth taking the time to get out as much as you can.  Let spinach cool. Combine cottage cheese, mozzarella or cheddar, spinach, eggs, oil, and seasonings.  Pour mixture into 9-inch pie plate.  Sprinkle parmesan over top.  Bake for 40 minutes or until knife comes out clean.  Serve with sliced tomatoes on top.  Serves 6.
