I got really industrious today and made these burgers for lunch :). If you watch Food Network, you might notice that I stole the idea from the Ultimate Recipe Showdown. Yummy!
Reuben Burgers:
1 lb extra lean ground beef
1 1/2 t finely ground pickling spices (I bought a thing of McCormicks pickling spice, which had cloves, all spice, bay and other seasonings in whole/mostly whole form then put it in a pepper mill to grind it)
salt to taste
1 large can sauerkraut
homemade russian dressing (or bottled if you can find one w/ low enough sugar, I used a recipe I found somewhere and will post if I can find it again)
4 slices lf swiss cheese
4 ww buns (I just skipped this part)
Combine ground beef with pickling spices and salt and pepper to tasted. Heat a large skillet over medium high heat and place burgers in skillet. Sear on each side, then reduce heat and cook until done.
Heat sauerkraut up according to directions.
Place burger on bun or plate. Top with sauerkraut as desired. Place on slice swiss cheese on top of burger. Microwave approx. 45 seconds to melt cheese. Top with desired amount of dressing.
Yummy and so, so much easier than making corned beef!

If you love reubens, try turkey pastrami from the deli counter. I make a bed of sauerkraut, top it with turkey pastrami and then melt a slice of swiss cheese on top. I have never been able to find low sugar Russian dressing, but I make my own with lf mayo, nsa ketchup and nsa green relish. It's a little hard to find, but nsa green relish does exist...look carefully at the labels in the pickle aisle.
