I just made this for dinner and I must say, it is the best thing I have ever made on the SBD!  I just had to share it!


Shrimp Scampi Primavera


3/4 cup olive oil


2 tbsp minced garlic


1/2 tsp lemon peel


2 tbsp lemon juice


1/8 tsp pepper


2 carrots (cut in 2" thin strips)


1 zucchini (cut in 2" thin strips)


1 red pepper (cut in 2" thin strips)


1 1/2 lb medium shrimp (cleaned)


2/4 tsp salt


2 tbsp basil


2 tbsp parsley


1lb whole wheat spaghetti or 1 large spaghetti squash, cooked and prepared.


Heat oil in large skillet, cook and stir garlic and lemon peal about 30 seconds.  Add vegetables and shrimp and cook over medium heat until shrimp turns pink, about 3-4 minutes.  Sprinkle with lemon juice, salt, and pepper.  Stir in basil and parsley.  Spoon over spaghetti and toss well.


 


When I made this today, I used the spaghetti squash and it was unbelievable good - I actually preferred it to pasta!  I also threw some extra vegetables in that I wanted to use up (green pepper and yellow squash).  I hope you all enjoy it as much as I did!
