Got this recipe on Epicurious.com...made some changes of my own...very good soup!  I added more carrots and celery to get more veggies in.  Also, I used a hand blender to process it a bit to add a creamier texture to it...I recommend doing this, it is delicious!


RED LENTIL SOUP


1 1/2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, chopped
2 carrots, chopped (1 cup)
1/2 cup chopped fresh or canned tomato
1 celery rib, chopped
1 1/4 teaspoons ground cumin


1 teaspoon turmeric ( I added this on my own for extra flavor)


1/2 teaspoon salt
1 cup dried red lentils
1 1/2 cups water (original recipe had 4 cups water and 1 1/2 cups chicken broth - I like chicken broth better)
4 cups chicken broth
2 tablespoons chopped fresh parsley


Heat oil in a 4- to 5-quart heavy saucepan over moderately high heat until hot but not smoking, then sauté onion, stirring, until golden, about 5 minutes. Add garlic, carrots, tomato, celery, cumin, turmeric, and salt and sauté, stirring, 2 minutes. Add lentils, water, and broth and simmer, uncovered, stirring occasionally, until lentils are tender, about 20 minutes.

Stir in parsley, then season with salt and pepper.

Too funny that you posted this today! I made red lentil soup this morning and didn't really have a recipe to work with. It turned out I put too much liquid in it though....so I just tossed in some split peas to thicken it up a bit (hopefully)! I wish I had seen your recipe earlier!
