Shirataki--Thai Peanut Noodles

Tried the shirataki noodles tonight and I give them a big thumbs UP! I used them to make an adapted Thai peanut noodles recipe. I will definitely be buyuing them again. I rinsed them in hot water for a couple of minutes, then added them to my recipe the last few minutes. They reminded me somewhat of an al dente spaghetti without the stick to your teeth feeling :).
Here's my peanut noodles recipe:
1 C frozen sugar snap pea stir fry
1 C frozen chopped broccoli
1 C (can) water chestnuts, diced
1/4 C + 1/4 C beef broth or (could use veggie broth/cube if want completely vegetarian)
1 T soy sauce
2 t crushed red pepper (use less if you don't like spicy!)
1/2 t powdered ginger (or 2 t fresh)
1 clove garlic, minced
1 package (1 C) shirataki noodles
peanut butter to taste
Place large non stick sklilet over medium high heat and toss in vegetables and 1/4 C broth/water. Add seasonings to taste.
Cover and cook about 3-5 minutes, until vegetables ALMOST reach desired doneness.
Add rinsed and drained noodles, remaining broth and soy sauce.
Cover and continue cooking another 3 minutes.
Remove from heat and stir in desired amount of peanut butter.
I used quite a bit of peanut butter, because I love the flavor, but I would probably start with about 1 T and then add more as you desire.
I made this into 2 servings.
