Delicious Salad Recipe

I just bought this new cookbook titled "Simply Salads" by Jennifer Chandler.  You can check your local bookstore for it, I bought it through my school district where I work.  It is an amazing book full a great recipes and pictures.  The best part is that you buy the bagged greens for all of the recipes and add a few ingriedients.  The recipes for the dressings are also very SB friendly, you may have to occasionally have to change the sugar to splenda or whatever you use.    Here is 1 reciped that I made last night I wanted to share with all of you.


Brown Rice, corn, and grilled vegetable salad  (Makes 6 dinner or 8 side salad servings)


1 zucchini, cut lengthwise


1 red bell pepper, seeded and cut into 1 inch squares (I used a jar of roasted red peppers I had on hand)


1 red onion cut into 1/2 inch slices


1/4 cup evoo


2 tbl. soy sauce (I used the less salt)


2 ears corn shucked ( I used frozen kernals, and just placed it on my grill pan to give it the grilled flavor)


salt and pepper to taste


1 cup brown rice cooked and cooled to room temp.


1 (10 oz) bag of Hearts of Romain


Dressing:


1/2 cup fresh squeezed orange juice, 1 tbl. fresh squeezed lemon jucie, 2 tbl. soy sauce and 2 tbl. evoo


Whisk all dressing ingriedients together and set aside.


I used my indoor grill pan on the stove and placed all of the vegetables on the pan and grilled until done. When the vegetables are finished cooking, remove from grill and slice into bite size peices.  Place in a bowl, add the rice and toss.  Add the bag of Romaine, toss, pour the dressing over and toss one last time to coat.


This was a meal in itself for me.  I also added portobello mushrooms and I am sure you can add any vege you want.

corn is a phase 3 food.
