I fixed these tonight and we all gave them a thumb's up!!! This is the recipe that's on the back of the pouch of Chicken of the Sea crab meat.

I've tried several crab cake recipes, including Ellie Krieger's and this is definitely better than Ellie's. And, as I recall, easier to make. I'd say these are definitely restaurant quality!!!

Easy Crab Cakes

(2) 3.53oz. pouches Chicken of the Sea Premium Crab (drain thoroughly)
2T finely chopped red bell pepper
2T finely chopped green onions
2T mayo
2t lemon juice
1/4t seasoned salt
1/4t garlic powder
dash cayenne pepper
1 medium egg, beaten
2/3 cup seasoned breadcrumbs (substitute 2 slices of whole wheat bread toasted + some Montreal seasoning, made into crumbs using magic bullet or food processor)
3T Smart Balance (could probably get away with 2T)

In a bowl, red pepper, green onions, mayo, lemon juice, seasoned salt, garlic powder and cayenne pepper. Stir in Chicken of the Sea Crab, egg and 1/3 cup breadcrumbs (mixture may be sticky). Divide and form into 4 balls. Roll crab balls in remaining breadcrumbs; flatten into cakes about 1/2 inch thick. In skillet, melt butter over medium heat. Fry crab cakes 3 to 4 minutes per side or until golden brown. Makes 4 servings.

I could see that these would be good using either salmon or tuna. If you try them with either, let me know how they turned out!!!

We decided that these were so tasty that they didn't need any sauce to go with them. And that says alot coming from my DD, who thinks everything needs a sauce to go with it!!!

I've never tried this recipe with canned crab. I've always used the pouches and it turns out great. Maybe the canned crab had extra sodium??? What I did with the pouches was just open the pack and drain off the excess liquid. I probably used a bit more of the ww bread crumbs than it called for. I figured that was because I didn't properly drain the crab.

I don't know if anyone else has tried it, but I really like the pasturized crab from Costco.
