Here is a great recipe for a thick hearty chowder that is really good! I realize that the 1 slice of bacon is illegal but there is only one for the entire pot of soup, and it really adds to the flavour, but feel free to omit it.
3 boneless chicken breasts (cubed) 8 small new potatoes quartered
1 boneless ham steak (cubed) 1 1/4 cups chopped baby carrots
1 slice of bacon 1 med. onion chopped
2 cloves of garlic minced 4 1/2 cups ff chicken broth
2 cups ff milk 1/4 cup flour (you may use cornstarch as well to thicken)
1 cup frozen corn 1/2 cup reduced fat cheddar cheese
salt and pepper to taste
Saute bacon in soup pot, set on a paper towel. Saute chicken, ham, garlic and onions until cooked thoroughly. Add all of chicken stock, potatoes and carrots. Boil for 2o mins. To the milk add the flour and mix thoroughly. Add milk to stock mixture along with corn and allow to simmer for 15 mins. Before serving add cheese and bacon to soup allowing cheese to melt.

Unfortunately, in addition to the bacon, corn, flour
Thanks for the info!
