Spinach Cheese Casserole Recipe?

So I still haven't figured out what I'm brining to my uncle's for Easter, but I saw up above that a few of you are going spinach casserole. DH and I love spinach, and DH loves anything is casserole form! Could anyone share a recipe?
I found this one online and it looks pretty good (I'd use reduced fat cheese and smart balance butter). The only concern is the flour. Should I use it, omit it, or replace it with WW flour or cornstarch?
Recipe
- 2 10-ounce packages frozen spinach, thawed
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 tablespoons melted butter
- 6 eggs, beaten
- 16 ounces cottage cheese
- 2 tablespoons all-purpose flour
- 1 pound sharp Cheddar cheese, grated
- Salt and pepper
Preheat oven to 350 degrees. Lightly grease a 13-by-9-inch baking dish. Drain spinach well. Sauté onion and garlic in 2 tablespoons of the melted butter. Mix spinach with eggs, cottage and cheddar cheeses, flour and the remaining butter. Add sautéed onions and garlic. Season with salt and pepper. Pour into prepared dish and bake for 1 hour. Serves 8 to 10.

Here's the one I use: (SOOOOOO YUMMY!!!)
CREAMED SPINACH
3 Tbsp. margarine
2 T cornstarch
1/4 tsp. salt
1/4 tsp. black pepper
1 dash ground nutmeg
1 cup fat-free evaporated milk
2 T cream cheese
1 sm. onion - minced
1/4 c water
(2) 10 oz. pkgs. frozen chopped spinach - thawed
1/4 cup grated Parmesan
In a 2-quart saucepan over medium-low heat, melt butter 3 Tbsp. butter; stir in cornstarch, salt, pepper, and nutmeg; slowly whisk in milk; stir in cream cheese. Increase heat to medium; whisk mixture constantly until thick and smooth; remove from heat and set aside. In a skillet over medium-high heat, sauté onions in a little margarine until transparent; stir spinach and water into pan. Reduce heat to medium-low; cover; simmer, stirring occasionally, for 8 minutes. Stir spinach mixture into creamy mixture; return to medium heat; heat, stirring often, until warmed throughout. Remove from heat; fold in Parmesan.
