I love creamed spinach and wanted some with our Salmon today for Easter dinner.    Being a little bit of a "lazy cook" I improvised and it was so good.   I took one box of frozen spinach, thawed and squeezed all of thel liquid out.   Put in a small sauce pan, add a little skim milk and 2 triangles of Laughing Cow light garlic & herb cheese.    Seasoned with a little salt, pepper and garlic powder (just a touch) and YUM.


You have to work the cheese a little to get it to melt, and adjust the skim milk so that it will.   I think it would have been a lot better with 3 wedges of LC, but tried to limit it a little.   Next time will use 3, and even if you would eat the entire thing, its still low fat and much lower in calories than the "real" way.


For anyone that loves creamed spinach, but doesn't want the heavy cream/cheese usually in it, this is a pretty good substitue.   If we didn't have someone over, I would have eaten the entire thing!

I make the spinach/laughing cow mixture all the time without the skim milk.

Thanks for the other ideas Cathy -- I definitely will try it in the barley & brown rice.

Great ideas for the laughing cow! I've never used it for anything but a spread for my veggies. I did notice at Walmart the other day that they're actually starting to sell it in Tubs.


MAn, that company must LOVE the South Beach Diet.
