Spring Berries w/ Whipped Ricotta Cream

Spring Berries with Whipped Ricotta Cream


2 c. strawberries, freshly sliced


1 c. blueberries


1/4 c. diet sprite, or other diet lemon lime soft drink, divided


1 tbsp. fresh, chopped mint leaves


1/2 c. fat free ricotta cheese


2 1/2 tsp. lemon zest


2 tbsp. fat free sour cream


Toss strawberries, blueberries, 2 tablespoons of sprite and mint together in a medium bowl; set aside for 10 min.


Meanwhile, combine ricotta, remaining 2 tbsp. of sprite and lemon zest in another bowl; whip with a hand held mixer til light and fluffy.  Stir in sour cream.  Place about 3/4 c. berry mixture in each of 4 small bowls and top each with 1/3 c. of cream.
