White Chicken Chili (phase 1 friendly)

I made this for lunch, very yummy.



  • 2 cups cooked, chopped chicken breasts

  • 1 can white beans (do not drain)

  • 1 small can green chilies

  • 1/2 jalapeno (more or less to taste)

  • 1 onion

  • couple garlic cloves

  • ground cumin

  • low-sodium chicken broth (a can maybe? I don't know, I just poured some in from a large box)

Sautee onion and jalapeno in olive oil over med-low heat till softened. Add garlic and cook for about 1 minute. Add green chilies and cumin (a tsp. or so... however much you like). Cook until heated through. Deglaze pan with a dash of chicken broth. Add chicken and pour in enough chicken broth till it looks like chili (I'm so technical) Cover and simmer for about 30 minutes. Top with low-fat cheese, guacamole, low-fat sour cream or whatever.
