Looking for (old) Lime Chicken Recipe

Hello!  I am starting on SBD again after a few year hiatus.  I really enjoyed this site back then, and remember a recipe (that I can't find!) for chicken breasts that were cooked in part olive oil, part Smart Balance margarine, and lime juice.   The chicken was coated with a mixture of spices, like a rub.  I can't recall what they were, but I'm guessing things like garlic powder, salt, pepper, paprika, or maybe cumin?  Anyone recall this?  It was really good!

Thanks,

Lisa

Here you go - its still one of our favorites after 3 years:

Garlic Lime Chicken

1teaspoon salt
1 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2teaspoon onion powder
1/2teaspoonthyme
6boneless skinless chicken breast
2 tablespoons butter
2 tablespoons olive oil
1/2 cup chicken broth
4tablespoons lime juice

In a bowl, mix together first 7 ingredients. Sprinkle mixture on both
sides of chicken breasts. (one FlyBaby mixes a triple recipe on this
spice mix and keeps in a salt shaker to use for this purpose--
brilliant idea!)

In a skillet heat butter and olive oil together over medium high
heat. Satue chicken until golden brown on each side, about 5 minutes
on either side or until no longer pink in the center. Remove chicken
and add lime juice and chicken broth to the pan, whisking up the
browned bits off the bottom of the pan. Keep cooking until sauce has
reduced slightly. Add chicken back to the pan to thoroughly coat and
serve.

Too funny - we had this Monday night with green beans and brown rice pilaf!

I hadn't made it in awhile and this post reminded me of it, just as good as I remembered!

We had it last night, and my daughter (who is soon to be 3 and a picky eater) kept asking for more chicken.

I'm glad she liked it! My 7yr old dd finds it WAY too spicy as the recipe is, so I mix up the seasoning without the cayenne and season her piece, then add cayenne and do ours.

I couldn't find cayenne pepepr, so I just used crushed red pepper (that's not the same thing, right?), and I only has a bit over 2TBSP of lime juice, so maybe those two things made it mild enough for her.

Cayenne pepper is just ground up red pepper flakes or very similar.
