Healthy Banana Cookies

There was some talk in the DYK thread about using up over-ripe bananas. I have been thinking about cookies and googled this recipe. I am going to give it a try.
Healthy Banana Cookies

3 ripe bananas
1 cup dates or raisins (I imagine these add sweetness to the cookie. I will either try dried apricots or omit entirely).
2 cups rolled oats
1/3 cup oil
1 tsp vanilla extract
Preheat oven to 350 degrees. In large bowl or food processor, mash the bananas, stir in oats, dates, oil and vanilla. Mix well and allow to sit for 15 minutes. Drop by tspfuls onto ungreased cookie sheet. Bake for 15-20 minutes (depending on your oven).

I think I will give these a try today if I have time. Sounds like something the kids would like! I'll probably leave the raisins in for them...at least in half the batch.
I made these yesterday for the kids. I was surprised by the texture, considering there is no flour or leavening in them. They're pretty good! DH was surprised that there is no sweetener in them. DD requested them in her lunch today, so I guess they get the "thumbs up"!

Thanks for the review! I'm glad they were good! I had planned to make them but put my ripe bananas in the freezer.
I'd like to make a batch and then keep them in the freezer. Maybe next week!

I wonder if you can replace some of the oil with peanut butter?
