There was some talk in the DYK thread about using up over-ripe bananas. I have been thinking about cookies and googled this recipe. I am going to give it a try.
Healthy Banana Cookies

3 ripe bananas
1 cup dates or raisins (I imagine these add sweetness to the cookie. I will either try dried apricots or omit entirely).
2 cups rolled oats
1/3 cup oil
1 tsp vanilla extract
Preheat oven to 350 degrees. In large bowl or food processor, mash the bananas, stir in oats, dates, oil and vanilla. Mix well and allow to sit for 15 minutes. Drop by tspfuls onto ungreased cookie sheet. Bake for 15-20 minutes (depending on your oven).

You suggested replacing the oil with Ground Flax
The substitution ratio is three parts flax seed meal for every part oil you are replacing.
I think olive oil would add an odd flavor to cookies. Olive oil isn't generally used in baking for this reason. Canola oil would be better.
