There was some talk in the DYK thread about using up over-ripe bananas. I have been thinking about cookies and googled this recipe. I am going to give it a try.
Healthy Banana Cookies

3 ripe bananas
1 cup dates or raisins (I imagine these add sweetness to the cookie. I will either try dried apricots or omit entirely).
2 cups rolled oats
1/3 cup oil
1 tsp vanilla extract
Preheat oven to 350 degrees. In large bowl or food processor, mash the bananas, stir in oats, dates, oil and vanilla. Mix well and allow to sit for 15 minutes. Drop by tspfuls onto ungreased cookie sheet. Bake for 15-20 minutes (depending on your oven).

I have tried olive oil in baking in the past -- not these cookies, but pre-SB.
Just wanted to add to what Cathy posted. When making muffins, pancakes etc, I always replace *at least* half the oil with ground flaxseed meal. The ratio is 3:1, so if you are replacing 1/3 cup of oil, you would use

Yes, I think milled and ground would be the same thing.
2 cookies sounds about right for a serving.
I would say you can count it as a grain, fruit & nut serving.
