Carrot Fritters ??

CL's -- while looking for some bread recipes, I found this one. Would this be acceptable, if we substituted WW Flour, and deleted the butter for frying, using non-stick spray or a little canola oil instead and of course used Splenda for the sugar? If so, I'll give them a try.
Carrot Fritters
5-6 medium-sized carrots, finely chopped or grated (not puréed)
2 eggs
1/2 teaspoon salt
1 tablespoon sugar
1/8 teaspoon cumin (optional)
1/4 cup King Arthur Unbleached All-Purpose Flour
4 tablespoons (1/2 stick) butter
Mix carrots, eggs, salt, sugar, cumin (if desired), and flour in a medium-size mixing bowl. Set aside.
Melt enough of the butter in a medium-size skillet to just cover the bottom of the pan. Drop the batter by tablespoons into the hot butter. Fry fritters for a couple of minutes on each side, or until they're set and golden brown. Cool on absorbent paper. Makes about 20 fritters.

I'm actually re-reading this recipe and thinking with a very little bit of oil it is probably more of a saute than a "fried" item.
I think I'll give them a try, kinda like the zucchini cakes -- I'll use only enough oil and wipe around the non-stick skillet, or even try cooking spray and make them thin, so they will cook kinda like a small pancake.
Can't hurt to give it a try, and I'll post the results.
