Cinnamon Roasted Nuts

I originally found this recipe on Allrecipes but replaced the sugar with Splenda this weekend and they are fantastic! You can use any nuts you want, but I love pecans.



  • 2 cups nuts
  • 1 egg white
  • 1/2 tsp. water
  • 1/4 cup Splenda
  • 1/8 tsp. salt
  • 1/4 tsp. cinnamon

Whip all the ingredients, besides nuts, together until foamy. Add nuts and toss to coat well. Spread onto a jelly roll pan and roast for 1 hour at 250 degrees. Allow to cool completely and they'll be crisp and yummy :)

Cool! I've been meaning to try a similar recipe myself with almonds. The one I make has egg whites that you toss them in. Also would be legal. I think I've hesitated because i am afraid I wouldn't show restraint in my nut serving size! LOL

Oh crap! You just made me realize that I forgot to put the egg white in the recipe, lmao! Yes, have to have the egg white. I'm a dork. And you are related to me.

Made these today...WOW! Are they ever GOOD! And the recipe was so super easy too.
